Complete Meal in the Air Fryer
An air fryer is actually a fantastic thing! It saves on electricity, and it quickly prepares the food. Of course, it has its limitations in terms of how much you can fit in it, but it’s actually possible to cook a complete meal without any problems.
Chicken is a great choice—it’s inexpensive, kid-friendly, and it tastes good. But to avoid having the same whole chicken every time, chicken breast is also a good solution. It’s low in fat, and if you “indulge” it a bit with some spices or fill it with something delicious, it’s actually not bad at all.
You can easily prepare multiple things in your air fryer at once. Start with what needs the longest cooking time and add the other ingredients gradually so that everything is ready at the same time.
As a little bonus when cooking chicken this way, you can also make gravy at the bottom of the air fryer drawer. It goes really well with the dish and adds that final touch.
If you want some variation, you can try using other root vegetables instead of just potatoes. It could be parsley root, sweet potatoes, carrots, or similar—only your imagination sets the limits. In this recipe, I have chosen to fill the chicken with cream cheese seasoned with a good green pesto, but it could easily be mozzarella, sun-dried tomatoes, or other delicious fillings. The cream cheese goes really well with the chicken and gives a wonderfully creamy texture to the dish.

Ingredient notes
Potatoes – Small potatoes are preferable as they cook faster. Otherwise, you can cut larger potatoes into quarters.
Chicken breast – You can find chicken breast at any supermarket; look for nice large ones with enough space for filling.
Olive oil – Olive oil is used for the potatoes. Alternatively, if you have an oil spray, you can use that instead.
Sliced air-dried ham – You can use Jámon, Parma ham, or similar.
Green pesto – Find a good pesto; it makes a difference in taste. Alternatively, you can make your own. It’s used for both the cream cheese filling and the potatoes.
Salt & pepper – Salt and pepper are essential.
Cherry tomatoes – Cherry tomatoes add a nice acidity, and they taste great when roasted.
Water and chicken stock – You can do without them, but a bit of gravy is nice.
Cream cheese – I used neutral cream cheese, but you can also use a herb-flavored one.
How to make air fryer stuffed chicken breast?
Here’s a brief description of how to make a complete meal in your air fryer all at once. Make sure to season well; the potatoes can handle some salt. The air-dried ham adds a bit of saltiness to the chicken, so don’t overdo it with the salt.
Add water and stock to the bottom of the air fryer drawer and place the rack inside.
Place the pre-washed and drained potatoes in a bowl along with oil, pesto, salt, and pepper. Transfer them onto the rack in the air fryer. Start it and cook for 15 minutes.
While the potatoes are cooking in the air fryer, prepare the chicken breasts by filling them with a mixture of cream cheese, pesto, salt, pepper, and finely grated garlic. Finish by wrapping the ham around the chicken breasts to hold the cream cheese in place.
After 15 minutes, place the chicken breasts on top of the potatoes in the air fryer. Cook everything for an additional 25 minutes. When there are 10 minutes left, add the cherry tomatoes to the air fryer.
Once the time is up, remove the tomatoes, chicken, and potatoes. Pour the gravy from the bottom of the drawer into a jug. Serve everything immediately.

- 1 tbsp green pesto
- ¼ tsp salt
- Pepper to taste
- 1 clove garlic finely grated
Instructions

Pour water and chicken stock cube into the bottom of the drawer of your air fryer.3 dl water, ½ chicken stock cube

Wash the potatoes in cold water and drain them in a colander.1 kg potatoes

- Transfer the potatoes to the drawer of your air fryer. Set the temperature to 180 degrees Celsius (356 degrees Fahrenheit) and cook for 15 minutes.
