A little out of the ordinary
We often make oven-baked potatoes, and they usually get a sprinkle of parmesan. It just tastes wonderful.
But this version is a little out of the ordinary. Here, the parmesan goes at the bottom of the dish, and the potatoes on top, and while the potatoes are cooking, the parmesan becomes golden and crispy.
Imagine a large parmesan chip with potatoes in it, doesn’t that sound fantastic?
Ingredient notes
Potatoes – Choose small potatoes. I would almost say the smaller, the better. Especially if they are to be snack potatoes for a good dip.
Parmesan – I bought a whole block of parmesan and grated it. You can also use pre-grated parmesan. It’s entirely up to you.
Oil – A little oil is needed on the potatoes. It binds the spices and helps give the potatoes a nice surface.
Spices – It’s important to season well. I used garlic powder, paprika, fresh thyme, salt, and pepper. You can vary the spices according to your taste.
How to make crispy parmesan potatoes?
It’s really easy to make these small delicious potatoes with parmesan at the bottom.
First, halve your potatoes and toss them with oil and all the spices.
Then spread the grated parmesan in an ovenproof dish, where you place the potatoes on top with the cut side down.
Put the dish in the oven for about half an hour until the potatoes are cooked and the parmesan at the bottom is golden.
Let the potatoes cool until the parmesan is completely crispy, and serve them with a delicious dip.

Frequently asked questions
They are best when fairly freshly made, so don’t make them too far in advance. They need time to cool before serving, so you can make them a little ahead. You can also prepare the dish and put it in the fridge, then just pop it in the oven about an hour before you want to serve it.

Ingredients

- Preheat the oven to 210 degrees Celsius with convection heat.

- Distribute the potatoes in the dish, placing them cut side down in the Parmesan at the bottom.
- Place the dish in the oven and bake the potatoes for 30-35 minutes at 210 degrees Celsius with convection heat until the potatoes are tender and the Parmesan is golden.
- Take the dish out of the oven and let it cool until the Parmesan has cooled and become crispy.
- Serve the potatoes as a snack with a good dip or use them as a side dish for dinner.
